Equipment you’ll need

  • Stand Mixer with Dough Hook Attachment – I use my hand mixer for many things, but you really need a dough hook to knead the bread. You can knead it by hand, I have, but a dough hook makes life easier.
  • Cutting Board – I like to roll my dough out on a floured cutting board instead of my counter. Personal preference.
  • Rolling Pin – To flatten the dough balls. This one comes with a pastry mat, which would be handy.
  • Large Spatula – To flip the dough rounds onto a baking sheet.
  • Non-stick Baking Sheet or Ceramic Pizza Stone

You’re gonna love this – only FOUR ingredients in this pita bread & I’m sure you already have these things on hand.

  • Active Yeast – I use active yeast (regular), which means you need to dissolve it in warm water.
  • Warm Water – Not too hot or it’ll kill the yeast. Anywhere between 105 degrees F and 115 degrees F should suffice.
  • Salt – To enhance the overall taste.
  • Flour – I use all-purpose white flour. I haven’t experimented with other types yet.

How to make Homemade Pita Bread

This section shows you how to make this recipe, with process photos showing the steps to help you visualize it. For full instructions, including amounts and temperatures, see therecipe card below.

  1. Step 1: Dissolve yeast in warm water for about 5 minutes in the bowl of your stand mixer. Add salt and 1 ½ cups flour, and with the dough hook, beat to make a batter.
  2. Step 2: Add additional flour until a rough, shaggy mass is formed. Knead for 8 minutes until the dough is smooth and elastic. Add more flour if it is too sticky. Turn the dough onto a lightly floured surface and divide it into six pieces for large pitas or ten for smaller ones.
  3. Step 3: Form dough into balls, then flatten with a rolling pin into ¼-inch thick discs. Try and keep an even thickness, as this is what helps them ‘puff’. Let rest on the floured surface for 30-40 minutes, or until slightly puffed.
  4. Step 4: While the dough is resting, preheat the oven to 425F. With a large spatula, flip the rounds of dough upside down onto a baking sheet. Bake 10-15 minutes, until light golden.

Melissa’s Tip – Stick around for the first five minutes of baking when the pitas perform their magic and puff up from flat pancakes to proud, four-inch high pitas!

FAQs

What is the difference between Greek style pita and regular pita bread? ›

Greek pita bread is one of those lesser-known flatbreads that is often referred to as “Mediterranean Pita” or as “pocket-less pita”. Whereas the more common pita bread (sometimes called “Arabic pita”) has a hollow “pocket” that is usually stuffed, Greek pita bread is soft, slightly thicker and has no pocket.

What is a good substitute for pita bread? ›

Naan can be used in place of pita bread for many dishes, adding a unique twist to traditional recipes. For example, instead of using a pita to make a gyro or falafel sandwich, you can use naan to create a delicious fusion dish.

What makes pita bread puff up? ›

A very hot oven rapidly creates the steam that puffs up the pita.

What makes the pocket in pita bread? ›

The pocket in a pita is made by steam, which puffs up the dough during the baking process. When the bread cools, it becomes flat again but a pocket is left in the middle of the bread. The pockets in pita bread make them perfect for making sandwiches, wraps, and other types of recipes you can hold in your hand.

What is gyro vs pita? ›

The pita is a soft and leavened flatbread, generally round or oval. It is often used in pockets because that helps hold the fillings and can also be cut and used as a tortilla. On the other hand, Gyros is the meat filling inside the pita.

What is the healthiest pita bread to eat? ›

Choose whole wheat varieties, which contain more fiber and nutrients. Choose lower sodium options, especially if you are watching your blood pressure. Select pita bread with higher fiber and/or protein content which will help keep you full.

Is pita bread better for you than bread? ›

While similar in calorie content, one slice of wheat bread (29g) is higher in sugar and lower in dietary fiber than one small pita bread. It is also slightly higher in sodium and fat content. Since most people eat two slices of bread in one sitting and only one pita bread, pita bread may be a healthier option.

Is Flatbread the same as pita bread? ›

Flatbread is a broad category of breads that are flat. Pita is a type of flatbread, as are naan, lagana, roti, focaccia, Syrian bread, lavash, chapati, and myriad others. Almost every country has their own version of flatbread.

Why does my pita bread not have a pocket? ›

A host of factors can make perfectly puffed pitas difficult to pull off. If the round of dough is too thick, the dough is too dry or the oven temperature is too low, pita breads will struggle to puff.

Why is my pita thin on one side? ›

Flipping the pita soon after it begins to puff (just when it begins to bubble around the edges) prevents one side of the pita from being substantially thinner than the other. I tend to pull my pitas from the oven as soon as they are fully puffed, to keep them soft.

How long does homemade pita bread last? ›

The baked pita will stay fresh for about 3 days stored in an airtight container or bag. Reheat before serving. You can also freeze the pita for up to three months.

Why is my pita bread not rising on the pan? ›

Overcooking: If pita bread is cooked for too long or at too high a temperature, it can become dry and lose its moisture, which can cause the bread to become rigid and prevent it from forming a pocket. Undercooking: If pita bread is not cooked for long enough, it may not rise properly and form a pocket.

What is the difference between Greek and Middle Eastern pita? ›

Greek pita tends to hold its shape more whereas Middle Eastern pita bread can fall apart if it's not too fresh. Both types of flatbreads are delicious and useful in their own right. At the end of the day, both cultures share so much in common that the differences are quite indistinguishable at times.

Is naan the same as Greek pita? ›

Naan bread is more moist and tender than pita bread. This is due to the added ghee (butter oil) and soybean or canola oil, which increases the total fat to 10 g versus the 5 g in the pita, which contains only a small amount of oil. The naan bread also has double the amount of sodium that is in the pita.
